PRODUCTION AREA: Roero, municipality of Canale
SOIL: Sandy calcareous, clayey of light color
HARVEST: End of september, exclusively by hand
CULTIVATION: Traditional guyot with 8/9 fruits per plant
YIELD PER HECTARE: 80 QT
VINIFICATION: Crushing and destemming of the grapes, maceration 7/10 days with manual pumping over, vinified and refined in steel tanks
MATURATION: Steel tanks
COLOUR: Intense ruby red, with violet reflections
BOUQUET: Fresh, fruity, plum, blackberries, violets, licorice
TASTE: Small red fruits, sapid, with a full, long, harmonious, warm sip. Persistent and juicy finish
PAIRINGS: Aperitifs, whole meal, cold cuts and traditional cheeses
