Brut Classic Method “Seventy”: the energetic bubble of Roero

On Filippo Gallino’s 70th birthday, the Brut Classic Method “Seventy” comes to life: the white grape suitable for any major event! Convivial, fresh and with a strong minerality; during a special occasion or in everyday life, this wine always gives you a lively energy.

GRAPE VARIETY: White grapes typical of the vineyard area of the left of the Tanaro river

PRODUCTION AREA: Left area of Tanaro, close to Gallino’s winery

SOIL: Sandy clayey of light color

HARVEST: September, xclusively by hand

CULTIVATION: Traditional Guyot with 8/9 fruits per plant

YIELD PER HECTARE: 80 QT

VINIFICATION: In white, with separation of the must from the skin before fermentation, soft pressing by penumatic press and fermentation in steel tanks at controlled temperature. Tirage in the summer following the harvest, with a stop of 48 months on the lees and subsequent aging after degourgemant for a further 6 months

MATURATION: Steel tanks and bottle

COLOUR: Straw yellow

BOUQUET: Flint, cedar, bread crust, citrus

TASTE: Dry, mineral, sapid, very persistent, balanced, with sensation of wild flowers and chamomile

PAIRINGS: Aperitifs, appetizers, shellfish, seafood crudité, fish
