White wine Moda Veja: the wine that made history
The traditional tale of Moda Veja “I j’era una volta”, once upon a time, takes shape in the white wine Moda Vja. Filippo Gallino, producing this unique white wine, tells, in a single sip, the story of the first bottle of Arneis Secco, produced in 1972. An intense story, full of dreams, desires, hard work and faith, faith in one’s ideas, labeled at the era as bizarre, crazy. This full, dry white wine not only represents history, it is made of history, made the old-fashioned, traditional way.
GRAPE VARIETY: White grapes typical of the vineyard area of the left of the Tanaro river
PRODUCTION AREA: Close to Azienda Agricola Filippo Gallino
SOIL: Sandy clayey of light color
HARVEST: September, exclusively by hand
CULTIVATION: Traditional Guyot with 8/9 fruits per plant
YIELD PER HECTARE: 60 QT
VINIFICATION: Crushing, destemming of the grapes and subsequent fermentation in contact with the skins, after about 24 hours from the beginning of fermentation the separation between the must and the marc takes place. The fermentation proceeds naturally without the use of selected yeasts until the total exhaustion of sugars. Aging on fine lees for about 6 months and subsequent bottling without special manipulations

COLOUR: Deep straw yellow, intense
BOUQUET: Flint, sage, hay, linden, apricot jam, aromatic herbs
TASTE: Dry, full, creamy, with mineral and savory sensations, intense aftertaste of flint with licorice
PAIRINGS: Appetizers, fish and fish soups, legume soups, white meats with sauces, veal with tuna sauces
SERVING TEMPERATURE: 10/12° C but also higher, several hours after opening the organoleptic characteristics change, making it really special
