Veal in sauce with Roero Arneis recipe

An excellent second course with Roero Arneis

The necessary ingredients for our recipe to be enjoyed with Roero Arneis are

  • 1 round about 2kg,
  • 2 carrots,
  • 1/2 onions,
  • 2 celery legs.

To compose the sauce we use

  • 3 eggs,
  • 3dL of extra virgin olive oil,
  • 1 handful of parsley,
  • marjoram,
  • 5/6 stems of chives,
  • garlic,
  • cucumbers,
  • lemon,
  • salt and pepper.

Bring the water to the boil with the perfumes and salt, immerse the walker and cook it for about 40 minutes over low heat.

Remove the meat from the heat and let it cool in its broth. In the meantime we can dedicate ourselves to the mayonnaise by whipping the eggs with the oil.

Once a rather thick consistency has been obtained, season the mayonnaise with finely chopped herbs and cucumbers, adding salt, pepper and lemon to taste.

Finally, cut the slices of meat very thin and season with the sauce obtained. We serve and enjoy the delicious dish with our Roero Arneis!
